When food is prepared in the traditional method – cooked above 118 degrees – it yields dishes that unfortunately have lost much of their nutritional value. The live enzymes, which are important for the digestion of the food, have been cooked out, as has the water content. Raw food is the most flavorful, colorful, and dynamic food on earth, and also happens to be one of the most nutritious. Just take one smell of a fresh mint leaf and you get the idea!
