What is Raw Food?

Raw foods that contain all of their natural beauty and nutrition are referred to as “living.” Living cuisine consists of minimally processed fruits, vegetables, nuts, seeds, sprouted grains, and legumes–in short, it is a plant-based cuisine that is prepared at the optimal temperature – never heated above 118 degrees.

Why Raw Food?

Very few approaches to food allow for the perfect marriage of “gourmet” and “healthy”–that’s where Matthew Kenney comes in. When food is prepared in the traditional method – cooked above 118 degrees – it yields dishes that unfortunately have lost much of their nutritional value. The live enzymes, which are important for the digestion of the food, have been cooked out, as has the water content. Raw food is the most flavorful, colorful, and dynamic food on earth, and also happens to be one of the most nutritious. Just take one smell of a fresh mint leaf and you get the idea!

Matthew Kenney, a classically trained chef, decided to combine his expansive culinary skill with his passion for optimizing the nutritional benefits of food, taking it upon himself to craft a cuisine that showcases as much complexity and artistic presentation as traditional, less nutritional cuisines , while remaining true to his core mission of leading individuals to a more healthy life through his art, his passion–his food.
